1. If you have a 'camera' function on it, you can take pictures of the book pages while you read it to your class. Then the next day, go back to it and use the board to circle or high light sight words or letters. Big books are no longer needed!
2. If there's a video mode - I video the students saying quick rules of the class or activity. Then if someone makes forgets a rule or step, I simply go back to the video and play the student saying the rule (versus me being a broken record)
3. Showing any kind of demonstration or modeling what to do under the docucamera...the ideas are endless... here's a site that may help.
